Add this intriguing combination of pumpkin, citrus and spiced rum to your bartending repertoire.
This cocktail is one of the brightest stars on Tanaman’s drinks list. It’s complex and zingy with a gentle tang. The roast pumpkin brings depth and sweetness, which plays nicely against the acidity of the citrus and the smoothness of the rum. Pour it up and raise a glass to the good times.
50 ml spiced rum
20 ml fresh orange juice
20 ml lemon or lime juice
10 ml coconut nectar
2 tablespoon butternut pumpkin purée
2 pc fresh thyme leaves
For the pumpkin purée
Cut a small butternut squash in half, lengthwise. Clean out the seeds, wrap with aluminium foil, bake in the oven at 180 ℃ for 30 – 45 minutes, or until fork-tender. Set aside to cool.
Peel off the skin, blend until smooth. Pop it in an airtight container, keep it in the fridge up to 3 days.
Combine all ingredients in a shaker with ice. Strain through a Hawthorne strainer or slotted spoon into a coupette. Garnish with thyme.
